Homemade noodles, grinded carefully with stone mill

We have our own farm in Etanbetsucho, Asahikawa, Hokkaido. There, we cultivate Japan’s best quality buckwheat, and grind them raw with a stone mill. Then we make fresh soba noodles on the third floor of the restaurant.
For customers’ health, we mix high-rutin (400 times more than rutin), refined from young buckwheat leaves with special manufacturing method, into the buckwheat flour. Which is the reason why we serve green-ish colored soba noodles.

The special soup to enhance the flavor of soba noodles

We use slightly alkaline water which is suitable for cooking. The special soup is made with “Kaeshi” (dipping sauce base) made of dark soy sauce, light soy sauce, mirin (Japanese sweet rice wine), light brown sugar and water mixed with “Ichiban Dashi”, which is the broth made with Katsuobushi (bonito flakes), Sodabushi (dried auxis flakes) and Sababushi (dried mackerel flakes), and no added artificial seasonings.
Enjoy the two different dipping sauce, “Mori-jiru” for “Mori-soba” (plain cold soba noodles) and “Zaru-jiru” for “Zaru-soba” (cold noodles topped with shredded dried seaweed).

The birth story of the
“original” Kamo-seiro

In the spring of 1963, the present president of Choujyuan was eating “Zaru-soba” on the third floor of the restaurant. He accidentally spilled the “Soba-jiru” (dipping sauce for Zaru-soba). There weren’t much soba noodles left on the dish, so he decided to dip the noodles in his daughter’s leftover “Kamonan udon” (udon in a hot soup with duck and green onion) soup. The "first kamo-seiro" that should have been called an accidental product at that time was surprisingly delicious.
Later, the special soup specifically for “Kamo-seiro” was devised. Generally, soba restaurants make two kinds of soup, cold Karatsuyu (spicy soup) and hot Amatsuyu (mild soup). However, we also made the soup in between those two. In addition, we use 100% domestically-produced duck loin and thigh, and balance perfectly with the special soup.


Carefully selected duck meat
for health and beauty

We use English Cherry Valley ducks bred in Saitama, Japan. These ducks are bred in an open poultry house with 16 ducks in one tsubo.
Duck meat contains a high amount of unsaturated fatty acids and has the function of lowering blood cholesterol. It is also high in nutrients such as vitamin A, B2 and iron, which is beneficial for maintaining beautiful skin (especially for women) and prevents anemia. Duck is often associated with a high fat content; however, it is light and healthy due to its very fine fat particles.

It was founded in 1935 at Kobikicho 2-chome (present-day, 2-13-19, Ginza). We serve nutritious and healthy soba every day, with carefully selected ingredients. Traditionally made flavorful Kamo-seiro is our No. 1 popular dish. Over the years, we continued to preserve the traditional taste.

  • Founded on April 29th, 1935, at Kobikicho 2-chome.

  • Opened new restaurant at 1-7, Ginza Higashi in 1949.

  • Renovated from three-story wooden building to a
    seven-story building in 1972.

  • Moved to present location (1-21-15, Ginza) in 1989.
